Farm-to-Table Done Right!
Chianti Cow, the area’s premiere farm-to-table restaurant, has been owned and operated by Chef Keith O’Connor and his wife, Lisa, for the past 20 years. Keith and Lisa, both natives of the Greenville area and graduates of Minisink Valley Central School District, are passionate about providing great food and great service to the community where they were raised.
Chef Keith, a graduate of the Culinary Institute of America, developed his love for the kitchen in high school while working for the owners of Carmine’s – Carmine and Georgette Scaglione. After traveling the country and developing his own cooking technique under various chefs, Keith returned home with the dream of owning his own restaurant.
In 1999, Keith and Lisa made that dream a reality, when they purchased Carmine’s and rebranded it as Carmine’s Chianti Cow.
In 2019, after a full restaurant renovation and appearance on the hit Food Network series, Restaurant: Impossible, they once again rebranded… as Chianti Cow – a place to enjoy the farm to table experience amongst friends and family.
After all these years, Keith and Lisa are still proudly raising their family and serving the town they love.
